FRESH FROM THE LOCHINVER HARBOUR
Lobster, langoustine, crab, prawns and squat lobster are all landed at the harbour which is literally 50 metres from our Lochinver restaurant.
Our scallops are locally sourced off the spectacular shoreline of Achiltibuie and the Summer Isles. Most of our wild salt water fish: haddock, hake, halibut and cod are delivered direct to our kitchens from the nearby harbour village of Kinlochbervie. The rest comes from the remaining working fishing ports of the Scottish Highlands.
The freshness and quality preparation of the seafood and the fish add a wonderful taste with a firm and succulent texture.
Our salmon, like most salmon eaten these days, is farmed. Whilst farmed salmon struggles to compete in taste with the increasingly rare wild variety, our farmed salmon is local and the smoking is carried out by David who runs the local smoker exclusively for Peet’s.
OUR FOOD FROM THE HILLSIDE
Highland beef, pork, lamb, chicken and, of course, venison is supplied by Greenless the local butchers just up the road at the other end of the village.
Again, you cannot hide the superb quality of this produce due to the freshness and the first class way in which the animals have been reared and brought to the table.
Scottish Highland beef is world famous of course but, as with the fish and seafood, the outstanding texture and succulence of all the meat is unmistakable when compared to the mass produced fare that dominates the UK.
Our salad, spuds and vegetables are all local wherever possible and in any event certainly travel a lot less miles than the average restaurant in the UK!
But if we need to go the distance to get the right ingredients – Peet’s Restaurant will.
SOME OF OUR WINES
This list was drawn up by a lifelong lover of wine and connoisseur. The House Red and House White are very good but do take the short descriptions seriously because for the price we are offering some excellent wines.
From the reds I would very much headline the claret Château de la Grave Caractère, Côtes de Bourg 2009 – from, no surprise, Bordeaux.
Although it is above the £20 mark it really is fabulous and in my humble opinion worth much more than every penny!
From the white wines, apart from the very popular House White (Les Pierres Bordes Marsanne-Viognier 2013) I would recommend Domaine Mallory et Benjamin Talmard, Mâcon-Villages 2012. This wine is fabulous with salt water fish, especially cod.
Whereas if you like a wine that is not going to frighten the horses then you cannot go wrong with the very quaffable Pinot Grigio.
